It can be done, but I don't think you will find any official documentation about this from VMware. Maybe your storage vendor would have something or could provide management with something.
It might be worth the effort to duplicate a scaled-down version of this and do a test dry run. Document your steps and present this to management - then you have a detailed process to follow and management will hopefully feel good about the change.
